GP Recipe: Baked Bananas

I recently found a delicious-looking recipe for Baked Bananas on the Integrative Nutrition blog.   Since bananas tend to be well-tolerated by many GPers, I modified the recipe slightly to fit within the general gastroparesis diet guidelines.  If you’re sick of banana smoothies, give this a try instead.

GP-Friendly Baked Bananas

Prep Time:     5 minutes
Cooking Time:     15 minutes
Yields:     4 servings

Ingredients
4 firm bananas
1 teaspoon olive oil or non-stick cooking spray
1-inch piece grated fresh ginger (or 1/8 tsp dried ginger, but fresh is best!)
1 tablespoon cinnamon
1/2 tablespoon nutmeg
3-4 tablespoons brown sugar or 1/4 cup maple syrup, optional

Directions

1. Preheat oven to 375 degrees.

2. Peel and cut bananas in half, lengthwise.

3. Oil a baking pan or spray with non-stick cooking spray and arrange bananas.

4. Sprinkle with brown sugar/maple syrup, cinnamon, nutmeg, and ginger.

5. Cover and bake for 10 to 15 minutes.

6. Mash or puree cooked bananas, if desired.

7. Enjoy!
