Recipe: Sweet Banana Smoothie
In lieu of the Weekly Round Up, today I’m sharing the recipe for my Sweet Banana Smoothie. The recipe is similar to the Diary Free Pumpkin Smoothie from the Eating for Gastroparesis eBook, but this one doesn’t require almond milk and it’s a great way to use up left over sweet potatoes.
I typically bake up several white potatoes and sweet potatoes each week, so that I have them ready to go for lunches and dinners. This morning there was one lonely baked sweet potato left, so I decided to use it in place of the fruit in my regular breakfast smoothie. Despite the name, the result was a tasty, not-too-sweet drink packed with protein, vitamin A, vitamin C, potassium, and manganese.
- 6 oz. water
- 1 scoop vanilla protein powder (I use MRM Egg White Protein)
- 1/2 banana, sliced and frozen
- 1/2 medium sweet potato, baked/no skin
- 1/2 cup ice
- 1/2 tsp NutraSea + D Omega-3 (optional)
- 1/4 tsp cinnamon
Add all ingredients to your blender in the order listed and blend until smooth, adding more water as necessary to achieve desired consistency. Enjoy!
