GP-Friendly Chips (Make ‘Em or Buy ‘Em)

Are you ready for the Big Game tomorrow?   My team (the Buffalo Bills) hasn’t even made it to the playoffs this millennium,  but I still look forward to Super Bowl Sunday each year.  Good football, great commercials and the chance to win some money…what’s not to love?

Of course food is also a big part of the day and that can be frustrating for GPers.   The good news is while you’ll have to pass on the pizza and wings, you can enjoy another game day staple:  chips!   All of the following are GP-friendly.  Enjoy!

Make

Cinnamon-Sugar Tortilla Chips
{I made these last year and they were the hit of the party.}

  • 8 8-inch  flour tortillas
  • water
  • 1/4 cup sugar
  • 2 tsp cinnamon
  • canola oil spray
  1. Preheat oven to 400 degrees.
  2. Combine cinnamon and sugar in a small bowl.
  3. Brush one side of tortillas *lightly* with water (just enough so the cinnamon-sugar will stick).
  4. Sprinkle with cinnamon-sugar mixture.
  5. Cut each tortilla into 8 wedges.
  6. Arrange wedges in a single layer on a cookie sheet sprayed with cooking spray.
  7. Bake for 6-8 minutes or until crisp.  (Keep a close eye on them; they burn easily.)
  8. Cool before serving.
  9. Serve alone or with Pumpkin Dip (below).

Pumpkin Dip
{There’s about 3 grams of fiber in 1/2 cup of pumpkin, so 2 tbsp of this dip only contains about 0.25 gram.}

  • 3 ounces fat-free cream cheese
  • 3 ounces 1/3-less-fat cream cheese
  • 1/2  cup  packed brown sugar
  • 1/2  cup  canned pumpkin
  • 2  teaspoons  maple syrup
  • 1/2  teaspoon  ground cinnamon
  1. Combine cream cheeses, brown sugar and pumpkin in a mixing bowl.
  2. Beat at medium speed until well blended.
  3. Add syrup and cinnamon, and mix until smooth.
  4. Refrigerate for 30 minutes before serving.

Sea Salted Corn Chips

  • corn tortillas
  • water
  • sea salt
  • canola oil cooking spray
  1. Preheat oven to 400 degrees.
  2. Brush one side of tortillas *lightly* with water (just enough so the salt will stick)
  3. Sprinkle with sea salt.
  4. Cut tortillas into wedges and arrange in a single layer, salted side up, on a baking sheet sprayed with cooking spray.
  5. Bake 8-10 minutes, or until crisp and lightly brown at the edges.
  6. Cool 5-10 minutes before serving.
