Recipe: Peanut Butter Surprise Treats
We’re getting together with friends tonight and I was asked to bring my layered Chocolate Peanut Butter Rice Crispy Treats. The crowd-pleasing recipe calls for an obscene amount of peanut butter and chocolate, which means anything more than a teeny tiny bite is decidedly not GP-friendly. And, since they are ridiculously good, it’s nearly impossible to eat just one bite.
I didn’t want to disappoint anyone but I also didn’t want to deprive myself or end up sick, so I made the recipe as usual for them — and then worked on a GP-friendly twist for me.

I started with my basic Rice Crispy Treat recipe (which is GP-Friendly), swapping Cocoa Pebbles for the plain Rice Krispies:
- 3 tablespoons butter
- 5 1/2 cups of Cocoa Pebbles
- 10 oz. package miniature marshmallows
- Melt butter in a large saucepan over low-medium heat.
- Add marshmallows and stir until they’re completely melted.
- Remove pan from heat and add cereal.
- Stir until well coated.
At this point you have Cocoa Crispy Treats, which you can spoon into a 9×9 pan lightly coated with cooking spray, let set for 20 minutes and then cut into 12 squares.
Or, you can do as I did and…
- Spray standard size muffin cups* with cooking spray.
- Fill each muffin cup about 2/3 full with the cereal mixture and press down with wax paper or a spoon sprayed with cooking spray.
- Spread 1 teaspoon of organic creamy peanut butter on top of each treat (I actually used almond butter as I tend to tolerate it better).
- Press a little more cereal mixture on top to cover the nut butter and fill the cup.
*Using a muffin tin creates built-in portion control. Each generous serving contains about 5 grams of fat and less than 1 gram of fiber (the basic Cocoa Crispy Treat recipe contains about 2.5 grams of fat).
As a rule, I make a conscious effort not to nibble while I’m baking or cooking. A bite here and a bite there adds up quickly and it’s all too easy to end up full (or sick) before it’s even time to serve the food. By the time we got to Movie Night, I was dying to try one of my gooey treats so I was relieved when everyone else dove in to their plate of goodies as soon as we walked in the door.
The verdict?

This sounds yummmmy too. Would you just have one
for a snack per day or maybe two just as a snack later
on in the day. I am not sure about the size of snacks.
I can eat gold fish and low fat vanilla wafers but am not
sure how many is a good gp snack?
