Recipe: Gastroparesis Friendly Brownies

Every now and then, I get a serious brownie craving. Usually I’ll make a “Brownie for One,” but last week I wanted a real brownie. Not a mediocre substitute made in the microwave. Fortunately I had a box of organic brownie mix in the pantry and a container of Greek yogurt in the fridge, so…I whipped me up a batch of brownies (GP-friendly, of course). They turned out pretty darn good. A bit cakey, but oh-so chocolatey.

Remember, since GPers fill up quickly, meeting your nutrition needs always comes first! Treats should be enjoyed in moderation and should never take the place of nutrient-rich mini-meals or snacks.

For my fellow brownie-lovers out there, here’s the recipe:

  • 1 box of brownie mix (I used organic — my brownie-loving body doesn’t need the partially hydrogenated oils or artificial colors/flavors)
  • 6 oz. non-fat plain Greek yogurt
  • 1 egg
  • 1 egg white
  1. Preheat oven to 350 degrees. Spray the bottom of a 11×7 pan with non-stick cooking spray.
  2. Combine all ingredients in a bowl and stir just until combined. Don’t overmix.
  3. Pour into prepared pan. (I added sprinkles on top…just because. Totally optional.)
  4. Bake for 25-30 minutes, until a toothpick inserted 2 inches from the side comes out clean. Don’t overbake.

    Hello there!
    Thanks for the yummy looking recipe. Would you mind sharing the name of the organic brownie mix? Might just have to give this recipe a try. You twisted me arm. Ha-ha!

    Hi Crystal. I really want to make these brownies for my family tonight, but I don’t have any yogurt in the fridge. Can I replace the yogurt with anything like unsweetened almond milk or applesauce because I have those. Hope you can let me know. Thanks!

    You can use an equal amount of unsweetened applesauce. They might be a tad more cakey, but it should still work. Let us know!

    Hey Crystal the applesauce worked out great. The brownies weren’t too cakey at all, and my 14 year old cousin, who was extremely skeptical of the GP friendly brownie recipe, was pleasantly surprised and ate a big piece. Thanks again for sharing the recipe. Next time I’m going to try the recipe with yogurt and compare, but overall the brownies were extremely delightful and satisfying. I’ll be making them again soon.

    Yay! So glad it worked well. You’ll have to give us the verdict once you compare the two recipes. By the way, I’ve stopped telling my husband that things are GP-friendly until AFTER he eats them and says they’re good! He always thinks they’ll be “blah” but he can almost never tell. :)

    Hi I just wanted to give an update. I made your brownie recipe again with a friend, but this time I used the greek yogurt. From what you mentioned about the applesauce, I expected the brownie batch with the yogurt to be more dense then the applesauce batch, but surprisingly the yogurt batch turned out to be the more cakey batch. I used the same brownie mix and everything. So I think I’ll be using the applesauce in place of the yogurt from now on. You’ll have to try it using applesauce sometime, and see if you get the same results, but like I said, I just wanted to fill you in on my findings. Thanks again for sharing the recipe.

    Oh and lastly, in regards to the applesauce batch, the longer they sat the more dense they got. So by about the second and third day they were really sweet and gooey.

    Dana, I actually tried it with applesauce and only one egg (no egg white) last weekend, and I liked it much better that I ended up switching out the recipe in the new book last minute. Thanks for the suggestion!
