Gastroparesis-Friendly Brownie for One
As a Health Counselor, I probably shouldn’t be advocating brownies. But all of us need a chocolately treat sometimes and when you have gastroparesis a safe option can be hard to come by.
Plus, it’s always healthier to make your own “junk food” than to buy a packaged product. So on that note, here’s my recipe for a single-serve, gastroparesis-friendly brownie.
*Note: this is a virtually fat-free, throw-together, microwaved “brownie.” Obviously, it won’t be the best brownie you’ve ever eaten…but as someone who hasn’t had a real brownie in years, it tasted pretty good to me!
Ingredients
- 2 tablespoons flour
- 2 tablespoons sugar (I used a cinnamon/sugar mix)
- 1 tablespoon unsweetened cocoa powder
- 1/8 teaspoon baking powder
- 2 tablespoons applesauce or non-fat/low-fat yogurt*
- 1 tablespoon milk or water (I used unsweetened vanilla almond milk)
Directions
1. In a coffee mug, custard dish, or small bowl, stir together flour, sugar, cocoa powder and baking powder until combined.
2. Add applesauce/yogurt and milk/water. Mix until it forms a batter.
3. Microwave for 40-50 seconds. Don’t overcook it or it will be tough. It should still be a bit gooey when you take it out.
4. Eat warm. Enjoy =)
*If you can tolerate more fat in your diet, or you want to make this for a non-GPer, you can replace some or all of the applesauce/yogurt with vegetable oil or melted butter.
